Bison Cheeseburger Salad Bowl

Directions
- Heat a cast iron skillet over medium high heat, with the avocado oil.
- Add the bison – it should sizzle in the pan – and flatten out across the surface of the pan. Cook for 8-10 minutes, until golden brown (see tip below). Season with salt and pepper to taste. Remove from heat and allow to cool.
- In a medium bowl, stir together all the ingredients for the cheeseburger sauce. Set aside. In a large bowl, add all the salad ingredients. Top with the bison, and sauce. Toss thoroughly to combine. Garnish with sesame seeds. Serve immediately.
Chefs Tip: To get nicely browned ground meat, don’t crowd your pan. Let it sizzle before you turn the meat, ensuring you get the best flavour. You want to sear and sizzle vs boil and steam!

1 lb (454g) Extra Lean Ground Noble Premium Bison

3 romaine hearts, chopped and washed thoroughly
2-3 tomatoes, chopped

1 avocado, finely sliced
4-6 dill pickles, chopped
1 cup (237ml) old cheddar cheese, shredded

1/2 cup (118ml) mayonnaise
1-2 dill pickles, finely minced
1/2 cup (118ml) yellow onion, finely minced
1 tbsp (15ml) ketchup
1 tbsp (15ml) mustard
1 tsp (5ml) white vinegar
1/2 tsp (2.5ml) onion powder
