Zaatar Spiced Bison with Hummus and Greens

We LOVE ordering those fancy hummus plates from restaurants! You know the ones – a creamy hummus base topped with crispy bits of meat and yummy toppings! With this great recipe featuring Noble Premium Bison, you can create a fab version at home for a fraction of the cost, and ALL the flavour! If you can, using dried chickpeas instead of canned is one of the secrets to a SUPER creamy hummus!

  • Prepare the hummus: Add all the ingredients (except the ice water) in a food processor. Season with salt. Turn the processor on, and slowly drizzle in the ice water through the top, until the hummus reaches your desired consistency. More water will make a runnier hummus, and less will make a thicker hummus. PRO TIP: adding ice to the water you’re adding is one of the tricks to creating a SUPER creamy hummus! Once the hummus is smooth (about 2-3 minutes of processing), set aside.
  • Make the bison: Heat a skillet over medium heat for 3-4 minutes before adding in the oil. Allow to heat for another minute before adding the bison, breaking it apart. Reduce the heat to medium-low, and cook for about 10 minutes, stirring often, until the bison is nicely browned. Within the last minute of cooking, add the olive oil, za’atar and garlic. Season with salt and pepper to taste. Use a spoon to remove the bison from the pan and into a bowl. Return the pan to the heat. Add another tbsp of olive oil and then the fresh dandelion greens. Cook for 5-7 minutes, stirring often before adding the garlic. Seasoning with salt and pepper and set aside.
  • Assemble: Divide the hummus between four to six plates. Evenly divide up the bison and greens among the plates, and top with more za’atar and (optional) spicy chilli oil. Serve with hot pita for satisfying lunch, appetizer or light dinner.

1 tbsp (15ml) avocado oil
226g Lean Ground Noble Premium Bison
2 tbsp (30ml) olive oil
4-5 cloves garlic, finely minced
1 tbsp (15ml) za’atar spice
Salt and pepper to taste

For the Ultra Creamy Hummus:

3 cups (720ml) cooked chickpeas
1/2 cup (120ml) tahini
1/4 cup (60ml) lemon juice
3 cloves garlic
1/2 cup (120ml) ice water (more or less, depending on the texture you want)
Salt to taste
Chili oil, for garnish (optional)
