Sumac Marinated Bison Kebabs

These delicious bison kebabs from Chef Erica Karbelnik are perfect for appetizers or a meal all their own! Bison Steak Cubes are marinated with yogurt, lemon juice, and a tantalizing blend of spices, then grilled quickly for maximum tenderness.

  • Mix all ingredients together, except the onions, and let marinate in the fridge for at least 2 hours. For best results, let it marinate overnight.
  • Place bison on wooden or metal skewers and grill until desired doneness.
  • For the sumac onions, slice thinly and mix with sumac, lemon juice, salt and parsley. Let sit for at least 10 minutes.
  • Serve the bison on top of some hummus, sprinkle with the onions and fresh parsley leaves.

3 – 226g packs Noble Premium Bison Steak Cubes
4 tbsp Sumac
2 tbsp Ground Cumin
4 tbsp paprika
2 tbsp garlic powder
2 tbsp dried cilantro
2 tbsp salt
1 tbsp dried mint
1 tbsp sugar
1 tbsp turmeric
1 tbsp onion powder
2 tsp black pepper
1 tsp smoked paprika
1 tsp ground cinnamon
2 cloves garlic, grated
1/4 cup full-fat Greek yogurt
1/2 lemon, juiced

For the sumac onions:

1/2 red onion, sliced
1 tbsp sumac
1 tbsp parsley, chopped
1/2 tsp lemon juice
1/2 tsp salt
