Bison Steak with Truffle Fries

Classic steak frites we know and love with an elevated twist! Top Chef Erica Karbelnik pairs our Bison Top Sirloin Steak with Black Garlic Butter and Truffle Fries – a combo made in heaven!

Directions
Seared Bison Sirloin
- Heavily season the sirloin on both sides with salt and pepper.
- Heat up a cast iron pan on medium high heat and add oil.
- Sear the sirloin on both sides until you get a beautiful brown crust. Depending on the likening of your doneness, using a meat thermometer, remove from the pan when your steak has hit 120°F.
- Let rest on a rack for approximately 10 minutes with a knob of butter and some thyme.
- Clean out your cast iron with some paper towel and remove from heat.
- Place the pan back on high heat and add a small amount of oil. Add the sirloin and add a large knob of butter, thyme, and garlic. The butter should start to brown and get foamy.
- Baste your sirloin for about 2 minutes to bring up to 130°F for the perfect medium-rare sirloin.
Black Garlic Butter
- In a mixer with the paddle attachment on medium-high speed, whip all ingredients together to make compound butter.
- Add the mixture to your sirloin and store any remaining butter in the freezer for next time!
Truffle Parmesan Fries
- In a deep fryer or heavy bottom sauce pot, heat up a large amount of oil to submerge fries and bring to 350°F.
- Fry until golden brown.
- Season with salt, Parmesan, truffle oil and parsley/chives and serve.
Chef Tip: Bison is leaner than beef so don’t cook that beautiful bison steak past medium!

4 Noble Premium Bison Top Sirloin Steaks
½ tsp (2.5 mL) salt, to taste
½ tsp (2.5 mL) black pepper, to taste
1 (15 mL) Tbsp oil
5 g (1 tsp) butter
3 g (1/2 tsp) thyme
1 clove garlic
Black Garlic Compound Butter
15 g (3 cloves) black garlic
75 mL (5 Tbsp) unsalted butter, room temperature
3 g (1/2 tsp) kosher salt
Truffle Parmesan Fries
240 g (1/2 lb) French fries
3 g (1/2 tsp) kosher salt
2 g (pinch) black pepper
15 g (1 Tbsp) Parmesan, grated
5 g (1 tsp) parsley or chives, chopped
2 g (1/2 tsp) black truffle oil
