Bison Steak & Sweet Potato Fries

- Preheat over to 200°C and line a baking tray with parchment paper. Place sweet potato strips on baking tray, drizzle with two teaspoons of olive oil and season with salt and pepper. Toss to combine. Bake for 20-25 minutes or until golden.
- Bring bison steak to room temperature. Combine one teaspoon of olive oil in a bowl with lemon zest, garlic, salt and pepper. Place bison steak in the bowl and cover both sides with olive oil. Heat a pan over medium-high heat and cook steak for approx. three minutes each side to medium rare (do not cook past medium for best results). Remove to a plate, lightly tent your steak with foil, let rest for 5 minutes.
- Transfer sweet potato and steak to a clean plate and enjoy!
