Turkish Bison Islak Burger

Our Turkish Bison Islak Burgers are as delicious as they are messy! This is one recipe you'll want on repeat for the summer - just make sure you have lots of napkins! These are so easy to make and extra nutritious when you start with Noble Premium Bison - Canada's favourite new protein! Eat better, eat bison!

Directions
- Heat a small saucepan over medium heat. Add the butter and garlic, and cook for 1-2 minutes. Add the tomato sauce, paste, water and sugar, and season to taste with salt and pepper.
- Reduce the heat to low and simmer for 20 minutes.
- Meanwhile, combine all the ingredients for the burgers in a large bowl, and mix thoroughly. Divide the mixture into 4 equal patties.
- Preheat your grill to high heat (400-450°F). Place a cast iron skillet over direct heat, and allow to preheat for 10-12 minutes.
- Add a drizzle of avocado oil, and cook the burgers for 5-7 minutes per side, to an internal temperature of 160°F (at minimum). Allow the burgers to rest for 5-6 minutes.
- Brush some of the sauce on the bottom of the bun, and top it with one of the patties. Brush on more sauce, the top bun, and slather the sauce all over the outside of the bun. Wrap in parchment and allow the burger to sit for 2-3 minutes to absorb the sauce.
- Serve immediately.

Ingredients
1 lb (454g) Lean or Extra Lean Ground Noble Premium Bison
1 egg
1/2 cup (125 mL) breadcrumbs
1 red onion, grated
1 tsp (5 mL) garlic powder
1 tsp (5 mL) onion powder
1 tsp (5 mL) cumin
1/2 tsp (2.5 mL) cayenne pepper
1 tbsp (15 mL) avocado oil
4 burger buns (preferably brioche)
For the Sauce:
2 tbsp (30 mL) butter
4-6 cloves garlic, minced
398ml (13.5 oz) can of tomato sauce
156ml (5.5 oz) can of tomato paste
1/4 cup (60 mL) water
1 tbsp (15 mL) sugar
Salt and pepper to taste
