Steamed Bison Buns

These Asian-inspired Steamed Bison Buns taste 1000x better than anything you'll find in the frozen food section, and are really easy to make! All you need is a few basic ingredients, a steamer, and of course Lean or Extra Lean Ground bison from Noble Premium Bison!

Directions
- Prepare the dough: Add the water to a large bowl, and sprinkle over the sugar and yeast. Allow to bloom for 10-15 minutes before adding the flour. Use your hands or a mixer to knead until a firm, but smooth dough forms. Add more flour, if needed. You want the dough to be smooth, but not sticky. Cover, and allow the dough to rise in a warm place for 1 hour.
- Prepare the filling: Heat a skillet over medium heat. Add the avocado oil, and bison and cook, stirring often until nicely browned – about 10 minutes. Add the ginger, garlic, and 5-spice powder, and cook for another minute.
- Add the hoisin, oyster flavoured sauce, sesame oil, tamari chives and beetroot powder. Stir to mix thoroughly. Remove from heat, and allow the mixture to cool before filling.
- Cut the dough into 14-16 equal portions. Use a rolling pin to roll each portion into a 4-5 inch circle. Put a couple tablespoons of the filling in the middle, and use your fingers to fold and pinch the dough, enclosing the filling in the centre. Pinch firmly to close the bun.

1 1/2 cups (375 mL) warm water
1 1/2 tsp (7.5 mL) traditional yeast
2 tsp (5 mL) sugar
3 cups (750 mL) all-purpose flour (more for rolling)
For the Filling:
454g (1lb) Extra Lean Ground Noble Premium Bison
2 tbsp (30 mL) avocado oil
3 tbsp (45 mL) fresh ginger, finely minced
4-6 cloves garlic, finely minced
1 tbsp (15 mL) hoisin sauce
1 tbsp (15 mL) oyster flavoured sauce
1 tbsp (15 mL) sesame oil
1 tbsp (15 mL) tamari
1 tsp (5 mL) Chinese 5-Spice powder
1 tbsp (15 mL) beetroot powder (for colour)
3 tbsp (45 mL) chopped chives
