Peruvian Bison Loma Saltado

Our Peruvian Bison Loma Saltado is a twist on a traditional Chinese-Peruvian dish that combines grilled marinated strips of meat with a rich, flavourful tomato stir fry. Served with French fries and rice, this dish is a simple, yet hearty meal that is a fine balance of savoury, sweet and tangy flavours. The name literally translates to “jumping meat” in reference to the meat jumping while being stir-fried!

Directions
- Pierce the steak all over with a fork. Place in a sealable freezer bag.
- Whisk together the soy sauce, garlic, ginger, chili crisp, oyster flavoured sauce, and vinegar. Take 2 tbsp of the sauce, and add it to the bag with the steak. Refrigerate remaining sauce.
- Toss the steak to coat, and seal the bag. Place in the refrigerator overnight.
- Preheat grill to medium high heat. Grill steaks for 4-6 minutes per side. For best taste experience, don’t cook past medium.
- Allow the steak to rest for 6-7 minutes before thinly slicing against the grain.
- Meanwhile, take out the reserved sauce, add the cornstarch and water, and whisk to combine.
- Heat a skillet over medium high heat. Add the avocado oil, onions, tomatoes and bell peppers, and cook for 6-7 minutes before adding the sauce. Stir continuously for 1-2 minutes while the sauce thickens.
- Serve with rice and French fries. Garnish with sliced green onion and cilantro.

226g (8oz) Noble Premium Bison Round Steak
1/4 cup (60 mL) low sodium soy sauce
5-6 cloves garlic, minced
1-inch fresh ginger, minced
1 tbsp (15 mL) chili crisp
1 tbsp (15 mL) oyster flavoured sauce
1 tbsp (15 mL) red wine vinegar
1/4 cup (60 mL) water
1 tbsp (15 mL) cornstarch
1 tbsp (15 mL) avocado oil
1 red onion, sliced into wedges
3-4 tomatoes, sliced into wedges
1 sweet bell pepper, thinly sliced
For garnish, sliced green onions, cilantro
For serving: rice and French fries
