Mini Bison Swedish Meatloaves

If you love Swedish meatballs, you’re going to obsess over our Mini Bison Swedish Meatloaves! And they’re the perfect way to switch things up this holiday season. Making them mini means everyone gets the best part of a meatloaf - the crusty exterior! And don't get us started on the delicious leftovers you're going to have for the next day - if you're lucky!

Directions

  • In a large bowl, mix together the bison, breadcrumbs, parsley, spices, garlic, onion and egg. Season to taste with salt and pepper. Divide the mixture into 8 equal portions.
  • Heat a skillet over medium high heat. Add the avocado oil. Brown the bison meatloaves for 5 minutes on each side.
  • Preheat your oven (or grill) to 400°F. Transfer the pan into the oven (or grill, over indirect heat) and continue to cook for 15 minutes.
  • Remove the meatloaves from the pan, and add the butter and flour. Stir to combine. Cook for 1-2 minutes before adding the vegetable broth and heavy cream. Season with nutmeg, and salt and pepper to taste.
  • Return the meatloaves to the pan with the gravy, and put them back in the oven (or grill) for 4-5 minutes until the sauce thickens slightly.
  • Serve with egg noodles, or mashed potatoes. Garnish with fresh chopped parsley.

Mini Bison Swedish Meatloaves

Ingredients

454g (1 lb) Lean Ground Noble Premium Bison
1/2 cup (125 mL) seasoned Panko breadcrumbs
1/4 cup (60 mL) parsley, minced
1/4 tsp (1.25 mL) nutmeg
1/4 tsp (1.25 mL) ground allspice
Salt and pepper to taste
3-4 cloves garlic, finely minced
1 small onion, chopped
1 egg
1 tbsp (15 mL) avocado oil

For the Gravy:

1/4 cup (60 mL) butter
1/4 cup (60 mL) flour
1 cup (250 mL) heavy cream
1/2 cup (125 mL) vegetable broth
Pinch of nutmeg
Salt and pepper to taste
Chopped parsley, for garnish
