Lebanese Bison Arayes

Absolutely mouth-watering, bison really takes these Lebanese Arayes to the next level! Arayes are a middle eastern street food consisting of seasoned ground meat in a pita that is fried to crispy perfection! The name ‘Arayes’ means ‘bride’ in Arabic, as these are often served at weddings. Tasty on their own, they’re even more delicious with our Yogurt Tahini Sauce!

- Add the bison to a bowl, along with the onion, garlic, spices, egg and fresh parsley. Season to taste with salt and pepper.
- Divide the mixture into four equal portions. Carefully open each pita half. Spread one of the portions of bison inside each pita half, making sure to get the bison deep into the pita, in a uniform thin layer.
- Heat a cast iron skillet over medium low heat. Cook the arayes for 4-6 minutes per side.
- While the arayes are cooking, whisk together all the ingredients for the yogurt tahini sauce.
- Serve immediately with the sauce!

454g Lean or Extra Lean Ground Noble Premium Bison
1 large onion, mined
3-4 cloves garlic, minced
1 tbsp (15 mL) ground coriander
1 tbsp (15 mL) cumin
1 tsp (5 mL) smoked paprika
1 tsp (5 mL) allspice
1 tsp (5 mL) ground sumac
1 egg
1/2 cup (125 mL) fresh parsley, minced
Salt and pepper to taste
2 large pitas, cut in half
2 tbsp (3 mL) olive oil
For the Marinade/dressing:
1 cup (250 mL) plain yogurt
1/4 cup (60 mL) tahini
Zest and juice of one lemon
1 clove garlic, minced
1 tbsp (15 mL) za’atar
