Grilled Bison & Watermelon Salad

It doesn't get much fresher tasting than our summer-inspired grilled Bison Steak Salad with fresh watermelon! This salad is a perfect combo of sweet and spicy, and is really easy to make. Start with our economical bison Round Steak that's meant for marinating, and serve up a gorgeous salad platter perfect for your next summer party!

Directions

  • Add all the ingredients for the marinade/dressing to a bowl, and whisk to combine.
  • Pierce the steak all over with a fork. Place the steak in a sealable freezer bag. Take 1/4 cup of the marinade and drizzle it over the steak. Close the bag, and refrigerate for 8-12 hours (overnight).
  • Remove the steak from the marinade and pat dry with paper towel. Discard remaining marinade.
  • Preheat grill to medium high heat (400-425°F). Grill steak for 4-5 minutes per side, or until an instant read thermometer reflects your preferred level of doneness. For best results, do not cook past medium, as bison is a lean meat.
  • Allow to rest for 5-6 minutes before thinly slicing against the grain.
  • To serve: start by adding the melon balls to two plates. Divide the jalapeño, feta cheese, radishes, pea shoots, and mint leaves between both plates. Top with sliced steak, and drizzle some of the dressing over top both salads. Serve immediately.

Ingredients

226g (8oz) Round Bison Marinating Steak
3 cups (750 mL) watermelon balls
1/2 cup (125 mL) feta cheese crumbles
1 fresh jalapeño, thinly sliced
4-6 radishes, thinly sliced
1 cup (250 mL) fresh pea shoots
Handful fresh mint leaves

For the Marinade/dressing:

2 tbsp (30 mL) lemon juice
2 tbsp (30 mL) red wine vinegar
1/4 cup (60 mL) olive oil
1 tbsp (15 mL) Dijon mustard
1 tbsp (15 mL) maple syrup
1 clove garlic, minced
Salt and pepper to taste
