Grilled Bison Fajita Bowl

This Noble Premium Bison bowl combines chocolate and coffee rubbed bison, with grilled corn and peppers, all served on rainbow coloured quinoa! Top with cheese, beans, lettuce, tomatoes and avocados, and you’ve got a meal that’s both hearty and healthy.

Directions
- Bring the steak to room temperature.
- Sprinkle rub over steak, coating well on all sides.
- Grill over high heat for approx 3 minutes each side, until a temperature of 135°F (55-60°C) for medium rare is achieved. Bison is leaner than beef so don’t cook past Medium for best results.
- Slice again the grain and serve on top of quinoa with all the fixins’ you can cram on top!

1 454g Noble Premium Bison Steak
2 cups (500ml) cooked tri colour quinoa
1/2 cup (125ml) shredded lettuce
1/4 cup (60ml) sour cream
1 avocado, sliced
Handful of tomatoes, sliced
1/4 cup (60ml) shredded cheese
Handful of tortilla chips
1/4 cup (60ml) red onion
1/4 cup (60 ml) chopped cilantro
1/2 cup (125 ml) black beans
1 cob grilled corn
2 grilled red peppers, sliced
Mexican Chocolate Coffee Rub:
1 tsp (5ml) finely ground coffee
1 tsp (5ml) cocoa powder
1/2 tsp (2.5 ml) coconut sugar
1/2 tsp (2.5ml) cumin
1/2 tsp (2.5ml) garlic powder
1/2 tsp (2.5ml) oregano
1/2 tsp (2.5ml) smoked paprika
1/2 tsp (2.5ml) salt
1/4 tsp (1ml) black pepper
