Grilled Bison Aussie Burger

The classic Aussie Burger just got even better - with bison! This beauty is loaded - with bison, pickles, beets, bacon, grilled pineapple rings - and don't forget the Vegemite, mate!

Directions
- Preheat grill to medium high heat (400°- 450°F).
- In a bowl add the bison, egg, breadcrumbs and BBQ rub. Mix thoroughly to combine. Divide the mixture into four equal portions, and form into patties.
- Grill the burgers for 5-6 minutes per side, until an instant read thermometer reads 160° F. Add the cheese to the patties one minute before removing from the grill, to allow it to melt. If you so choose, you could also grill the pineapple rings for 3-4 minutes per side, or serve them as is. Grilling adds more caramelized flavour!
- Allow the burgers to rest, and thoroughly whisk the Vegemite with the mayonnaise. Vegemite is quite thick, so this will take a bit of elbow grease to make sure it’s thoroughly mixed in! Season with black pepper only, as Vegemite is very salty.
- Serve the patties on buns, with the Vegemite mayonnaise, sliced tomatoes, pickled beets, lettuce, pineapple rings, and bacon. You’ve got yourself a real Aussie classic here, mate!

Ingredients
454g (1 lb) Extra Lean Ground Bison
1 egg
1/3 cup (80 mL) breadcrumbs
2 tbsp (30 mL) BBQ rub (any BBQ rub would work here!)
Pickled beets (8-10 slices)
One tomato, thinly sliced
4 canned sliced pineapple rings
Lettuce
8 slices bacon, cooked
4 slices cheddar cheese
4 hamburger buns
For the Vegemite Mayo:
1/4 cup (60 mL) mayonnaise
1 tsp (5 mL) Vegemite
Black pepper to taste
