Country Fried Bison Steak

We love country style cooking, and these country fried bison steaks are comfort food at it's best. Super easy to make, just don't forget the gravy – it's almost the best part!

- In a small saucepan, melt butter over medium high heat. Add onions and cook for about 5 minutes, until the onions are starting to get browned on the edges. Add the flour, and cook for another minute. Add remaining ingredients. Turn heat to low, and continue cooking for another 3-4 minutes.
- In a shallow bowl, combine the egg with the milk. Season to taste.
- In a separate shallow bowl, combine the flour with spices.
- Using a meat mallet, pound the steaks to 1/4 inch thickness.
Pro Tip: if you don’t have a meat mallet, drape plastic wrap over the steaks and use a rolling pin! - Start with dipping the steaks in the flour. Then the egg wash, then the flour again. Preheat griddle to medium high heat. Grease the griddle with a small amount of butter and oil. Fry the steaks on the griddle for 3-5 minutes per side, until nicely browned. Serve immediately, with the gravy on top. Garnish the finely chopped chives.
