Chipotle Bison Bowl

The bison power bowl—with a little chipotle to really kick things up! You don't have to be in training to take advantage of all the protein and nutrients in this recipe. But if you are, bison meat is one of the leanest, most nutrient-dense proteins out there. Enjoy!

  • Heat olive oil in a non-stick pan over medium temperature and sauté the onion and garlic for a few minutes. Add the paprika, coriander, and cumin, and cook for a few more minutes until they become fragrant.
  • Add the extra lean ground bison breaking it up while cooking. Add the crushed tomatoes, beef stock, tabasco sauce, black beans, lime juice and salt and simmer for 20-25 minutes on low heat.
  • Serve half of the chipotle bison in a bowl. Place half of the avocado, corn and red capsicum alongside the bison, squeeze with lemon juice and top with fresh coriander. Refrigerate the other half for the next day.

1 454 g pkg Noble Premium Bison Extra Lean or Lean Ground

2.5 tsp (12.5ml) extra virgin olive oil
3.5 oz (100g) onion, diced
2 garlic cloves (crushed)
1 tsp (5 ml) paprika
1 tsp (5 ml) dried coriander
1 tsp (5 ml) ground cumin
7.1 oz (200g) canned crushed tomatoes
5.1 oz (150ml) reduced salt liquid beef stock
2 tsp (10ml) tabasco sauce
7.1 oz (200g) canned black beans (drained)
3 tsp (15ml) lime juice, freshly squeezed
3.5 oz (100g) avocado, chopped
7.1 oz (200g canned corn kernels drained
7.1 oz (200g) red pepper, diced
2 tsp (10ml) lemon juice, freshly squeezed
5 oz (15g) fresh coriander, chopped
pinch Himalayan salt & pepper
