Blueberry & Bourbon Bison Meatballs

Directions
- In a large bowl, mix together the panko breadcrumbs and milk, and allow to sit for 5 minutes.
- Once absorbed, add the Noble premium Bison, red onion, garlic, parsley, Worcestershire sauce, egg and paprika. Season with salt and pepper to taste. Mix thoroughly.
- Form the mixture into 23-24 small meatballs.
- Preheat a non-stick pan over medium high heat. Add the avocado oil and cook the meatballs for 5-6 minutes per side.
- While the meatballs cook, add the blueberry jam and bourbon to your favourite BBQ sauce, and mix thoroughly to combine.
- Add the BBQ sauce to the meatballs, and stir them to evenly coat.
- Turn the heat to low, and allow the meatballs to cook in the sauce, uncovered, for 9-10 minutes, rotating often.
- Remove the meatballs from the heat, and skewer each meatball with a blueberry. Serve immediately.
- If planning on serving at a later time, pack the meatballs in an oven-safe container and skewer with the blueberries just before you’re ready to serve them.

Ingredients
226g Lean or Extra Lean Ground Noble Premium Bison
1/2 cup (125 mL) seasoned panko breadcrumbs
1/4 cup (60 mL) milk
1/4 cup (60 mL) finely chopped red onion
2 cloves garlic, finely minced
1/4 cup (60 mL) fresh parsley, finely minced
1 tsp (5 mL) Worcestershire
1 egg
1 tsp (5 mL) paprika
Salt and pepper to taste
1 tbsp (15 mL) avocado oil
Fresh blueberries, for garnish
For the Sauce:
1/2 cup (125 mL) BBQ sauce
1/4 cup (60 mL) blueberry jam
1 shot bourbon
