Bison Steak Charcuterie Skewers

These eye-catching bison steak skewers are perfect to make for a party because all the work is done ahead of time. Unlike a traditional charcuterie board, it’s much easier to gauge how many skewers you’ll need for your guests. A good rule of thumb is 1-2 skewers per person. You can easily swap out any of the pickled items to suit your taste! Pickled artichokes, sun dried tomatoes, and pickled onions would also be delicious options.

  • In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, dried oregano, dried parsley, garlic, and chili flakes. Take 2 tbsp of the marinade and pour over the bocconcini. Stir thoroughly, cover and refrigerate for 8-12 hours.
  • Pierce the bison steak all over with a fork. Add to a sealable bag or container, and pour over the remaining marinade. Seal the bag and refrigerate for 8-12 hours.
  • Remove meat from marinade and pat dry with a paper towel. Discard remaining marinade. Season the steak with salt and pepper.
  • Preheat grill to medium high heat (approximately 400°F. Use a meat thermometer to grill to your preferred level of doneness (145°F for medium rare). For the best experience, do not cook past medium, as bison is a very lean meat.
  • Allow the steak to rest for 5 minutes before thinly slicing across the grain.
  • Skewer the pickled ingredients and basil leaves. Take a slice of bison steak and wrap it around a bocconcini, skewering through the seam side to ensure it stays secure.
  • Refrigerate until ready to serve.

226g (8oz) Noble Premium Bison Inside Round Steak
2 tbsp (30 mL) balsamic vinegar
2 tbsp (30 mL) olive oil
1 tsp (5 mL) Dijon mustard
1/2 tsp (2.5 mL) dried oregano
1 tsp (5 mL) dried parsley
1 clove garlic, minced
1/4 tsp (1.25 mL) chili flakes (optional)
Salt and pepper to taste
10 mini bocconcini
10 fresh basil leaves
10 grilled button mushrooms (in oil)
10 hot cherry peppers (in oil)
10 garlic stuffed olives
