Bison Sloppy Joe Stuffed Sweet Potatoes

Serve the potatoes whole for a dinner sized portion, or cut them in half for a lunch sized portion.

Directions

  • Preheat oven to 425°F. Place sweet potatoes on a parchment lined baking sheet. Prick on all sides with a fork.
  • Bake for 40-50 minutes, flipping halfway, until soft on the inside when pierced with a knife.
  • While the potatoes cook, heat a skillet over medium high heat. Add the avocado oil, and bison. Cook for 10-12 minutes, stirring often, until the bison is nicely browned.
  • Add the onions, garlic, onion powder, garlic powder, paprika, and tomato paste. Cook for 2-3 minutes before adding the beef broth, BBQ sauce, liquid smoke, mustard, Worcestershire sauce, and bay leaf. Season to taste with salt and pepper.
  • Cover, and reduce the heat to low. Simmer for 20-25 minutes.
  • Slice the sweet potatoes open down the centre, and use a fork to lightly mash the inside. Spoon some of the bison sloppy joe mixture over the top. Garnish with green onions and shredded cheese.

Ingredients

454g Extra Lean or Lean Ground Noble Premium Bison
3 large sweet potatoes
2 tbsp (30 mL) avocado oil
1 large onion, finely chopped
2-3 cloves garlic, finely minced
1 tsp (5 mL) paprika
1 tsp (5 mL) onion powder
1 tsp (5 mL) garlic powder
2 tbsp (15 mL) tomato paste
2/3 cup (160 mL) beef broth
3/4 cup (180 mL) BBQ sauce
1 tsp (5 mL) liquid smoke
1 tbsp (15 mL) Dijon mustard
1 tsp (5 mL) Worcestershire sauce
1 bay leaf
Salt and pepper to taste
Green onions, sliced (for garnish)
Shredded cheddar cheese (for garnish)
