Bison Pesto BLT

The 'BLT' is getting a glam-up with this Bison Pesto BLT! Pesto adds SO much more flavour (and health benefits) than traditional mayo. And a juicy Noble Premium Bison steak makes this sandwich both heart-healthy, and really flavourful. Use any one of our grilling steaks and remember - for best results don't cook your bison steak past medium.

Directions
- Preheat grill to high heat (400° F).
- Pat bison steak dry with paper towel. Lightly spray/rub with avocado oil. Season on both sides with salt and pepper.
- Grill bison steak over direct heat for 4-5 minutes per side, until an internal thermometer reads 135°F for medium rare, or 140°F for medium. For the best taste and texture, don’t cook past medium.
- Remove bison steak from the grill, and allow to rest on a plate for 5 minutes.
- Meanwhile, add all the ingredients for the pesto to a food processor (or mortar and pestle), and process until smooth, but not a fine paste.
- Thinly slice the steak against the grain, and you’re ready to build a bison BLT! Spread some of the pesto on both slices of the bread. Add some lettuce, the sliced bison steak, tomato, avocado and season with salt and pepper. Cut on a diagonal in true BLT fashion, and serve immediately.

225g (8oz) Noble Premium Bison Top Sirloin Steak
Avocado oil spray
Salt and pepper to taste
4 slices sourdough bread, grilled/toasted
2 tomatoes, finely sliced
4-6 leaves lettuce
1 avocado, finely sliced
For the homemade pesto:
1 cup (250ml) fresh basil
3-4 cloves fresh garlic
1/4 cup (60ml) walnuts, toasted
1/2 cup (125ml) Parmesan cheese
1/2 cup (125ml) olive oil
Salt and pepper to taste
