Bison On Horseback

This bison appetizer is a fun take on the classic British holiday appetizer - Devils on Horseback. Traditionally, these 'devils' featured a fruit (dates or prunes) stuffed with cheese and nuts, and then wrapped in bacon. This updated version is elevated with a layer of savoury ground Noble Premium Bison that makes them an extra special finger food.

Directions
- Preheat oven to 400°F. In a large bowl, combine the bison with the egg, breadcrumbs, paprika, onion powder and garlic powder. Mix thoroughly to combine. Season to taste with salt and pepper.
- In another bowl, combine the gorgonzola with the green onions, pecans and garlic. Mix thoroughly to combine.
- Remove the pits from the dates, and try and spread them open as much as possible (this will allow you to pack in maximum filling!) Add about half a tablespoon of filling to each date, and set each of them on a plate.
- Take about a tablespoon of the bison mixture and flatten it into a very thin patty. Imagine you’re making a smash burger with your hands. Take a date, and place it filling side down into the patty, using your hands to form the bison around the date. If it doesn’t fully cover the date, that’s okay! Just ensure it covers as much of the filling as possible. Resist putting too much bison around each date – you want as thin a layer as possible.
- Cut the bacon in half. Use half a piece of bacon to wrap each bison on horseback. Stretch the bacon so both ends touch one another on the underside of each.
- Place them on a parchment lined cookie sheet, and bake for 10 minutes.
- While they bake, whisk together the ingredients for the glaze.
- Glaze each of the bison on horseback, and bake for 5 minutes. Glaze again, and bake for an additional 5 minutes.
- Top with a few micro greens for a pop of colour, and serve immediately.

454g Extra Lean Ground Noble Premium Bison
1 egg
1/2 cup (125 mL) breadcrumbs
1 tsp (5 mL) EACH paprika, onion powder, garlic powder
Salt and pepper to taste
22-24 Medjool Dates
375g smoked bacon
Micro greens, for garnish (optional)
For the filling:
200g Gorgonzola cheese
2 green onions, thinly sliced
1/4 cup (60 mL) chopped pecans
1 clove garlic, minced
For the glaze:
1/2 cup (125 mL) ketchup
1 tbsp (15 mL) EACH soy sauce, sriracha and maple syrup
