Bison & Mushroom Zapiekanka

Bison & Mushroom Zapiekanka is our version of a toasted, open-faced sandwich that is a traditional street food in Poland. They’re referred to as ‘street pizzas’ and found on virtually every corner of the country. This version includes succulent browned bison for a hearty, simple sandwich that hits on all levels. Just don’t forget to dip or drizzle with ketchup!

- Heat a cast iron skillet over medium high heat. Add the avocado oil and butter, and allow to melt. Add the bison and break it apart with a wooden spoon. Cook for a few minutes before stirring in the mushrooms and onions. Cook for about 18-20 minutes, stirring often until all the liquid is evaporated and the bison begins to brown. Season to taste with salt and pepper.
- While the bison is cooking, butter the cut sides of the baguette. Grill (or toast) the baguette on both sides until lightly browned – about 2-3 minutes. Spoon the bison mixture onto the grilled baguette, and top with the shredded cheese. Place the baguettes over indirect heat in a grill (with the opposite side turned on medium high heat) or into a preheated 400°F oven for 8-10 minutes until the cheese is melted.
- Top with fresh green onions, and serve drizzled with ketchup, or on the side for dipping!

2 tbsp (30 mL) avocado oil
2 tbsp (3 mL) butter (and more for spreading on the baguette)
454g (1 lb) Extra Lean Ground Noble Premium Bison
227g cremini mushrooms, finely chopped
1 bunch green onions, finely sliced
300g Smoked Gouda, shredded
Salt and pepper to taste
2 baguettes, cut in half, and then sliced lengthwise
