Bison Irish Stew

Don't wait for St. Patrick's Day to make our delicious, nutritious Bison Irish Stew! Start with our perfectly cut bison steak cubes to make the prep even easier, let it simmer low and slow for an hour, and get ready for the happy faces around your dinner table!

Directions

  • Heat the avocado oil in a large Dutch oven over medium high heat. Use paper towel to pat dry the bison steak cubes. Add the bison to the pot, and cook until golden browned – about 8-10 minutes, stirring occasionally. Season to taste with salt and pepper.
  • Add the tomato paste, and stir. Add the onion, parsnips, potatoes, carrots, garlic, thyme and bay leaf. Stir for 2-3 minutes, before adding the Guinness, stock, Worcestershire and butter. Cover, and reduce the heat to low. Simmer for approximately 1 hour, until the bison is fork tender.
  • Mix together the cornstarch and water. Add to the pot, and stir until thickened – about 2-3 minutes. Remove from the heat.
  • Garnish with fresh chopped parsley. Serve with crusty sourdough.

Ingredients

1 lb (454g) Noble Premium Bison Steak Cubes
2 tbsp (30 mL) avocado oil
1 tbsp (15 mL) tomato paste
2 parsnips, peeled and chopped
1 large onion, chopped
2-3 large potatoes, chopped
2-3 carrots, chopped
4-5 cloves garlic, finely minced
3-4 sprigs fresh thyme
440 mL can of Guinness
1L beef stock
2 tbsp (30 mL) butter
Salt and pepper to taste
1 tbsp (15 mL) Worcestershire sauce
1/4 cup (60 mL) cornstarch
1/4 cup (60 mL) water
Fresh parsley, chopped, for garnish
