Bison Giovetsi

Giovetsi (pronounced you-vet-si) is a Greek dish consisting of braised meat and orzo in a rich red wine tomato sauce. Using Noble Premium Bison cubes makes this the ultimate winter one-dish dinner! And don’t skip the cinnamon stick; it adds a subtle complexity to the sauce that really makes this dish special.

Directions
- Heat a skillet over medium heat. Add the avocado oil, and bison. Brown on all sides for about 8-10 minutes.
- Add the carrots and onions, and cook for 2 minutes before adding the garlic. Cook for another minute before adding the red wine, balsamic vinegar, cinnamon stick, bay leaf, tomatoes and sugar. Season to taste with salt and pepper.
- Cover, reduce heat to low and simmer for 1 hour, stirring occasionally.
- In a separate pan, melt the butter. Add the orzo, and stir constantly for 2 minutes, allowing the orzo to toast and the butter to brown. Add to the tomato sauce mixture, and stir to combine.
- Pour the mixture into a baking dish.
- Preheat oven to 375°F. Bake for 45 minutes.
- Before serving, top with feta cheese and fresh chopped parsley.
