Bison Fried Olives

These tasty bison fried olives are crispy, salty and pop-able in one bite! Super quick to make, and absolutely addicting when you use Noble Premium ground bison. They are the perfect appetizer for a fancy New Years Eve party at home, served with a creamy dip or even a spicy marinara!

Directions
- In a large bowl, combine the bison with the spices, egg, and season with salt and pepper to taste. Mix well to thoroughly incorporate.
- Dry the olives well on a paper towel. Take about a tablespoon of bison and use your hands to flatten it into a patty shape. Put one of the olives in the centre, and form the bison mixture around it. Roll it firmly like you would a meatball.
- Roll the ball first in flour, then in the egg wash, then in the bread crumbs. Set on a plate, and bread the rest of the balls.
- Heat vegetable or avocado oil in a deep pot. Make sure your oil is between 325° – 375°F. Pro Tip: Put the handle of a wooden spoon in the oil. If it sizzles, you’re good to go!
- Fry the olives for 3-5 minutes, turning halfway through until golden brown.
- Remove from the oil onto a paper towel to absorb excess oil.
- Season with salt, and serve immediately with a dip of your choice.

226g Lean Ground Noble Premium Bison
1 tsp (5 mL) dried parsley
1 tsp (5mL) onion powder
1 tsp (5 mL) garlic powder
1/2 tsp (2.5 mL) paprika
1/2 tsp (2.5 mL) dry mustard
Pinch of nutmeg
1 egg
Salt and pepper to taste
12-14 stuffed olives
Vegetable or avocado oil, for frying
For Breading:
2 eggs, whisked with a splash of water
1 cup (250 mL) flour
1 cup (250 mL) seasoned bread crumbs
