Bison Cranberry & Brie Tartlets

Entertain in style with our scrumptious Bison Cranberry & Brie Tartlets on the table! These little morsels are the perfect balance of sweet and salty, with rich bison and creamy Brie. Pro tip: to make cutting Brie easier, put it in the freezer for about 20 minutes. It’ll firm up just enough to be able to cut, without it oozing all over the cutting board!

Directions

  • Preheat oven to 375° F. In a bowl, combine the bison with the cinnamon, cloves, orange zest, rosemary, onion powder, garlic, and egg. Season to taste with salt and pepper. Mix thoroughly to combine.
  • Roll puffy pastry out onto a cutting board. Cut into 24 equal squares. Spray a muffin tray with non-stick spray. Gently push one of the squares into each muffin cup. Use a fork to prick the bottom of each cup.
  • Take about 2 tsp of the bison mixture, and spoon it into each muffin cup. Top it with about the same amount of cranberry sauce, and a wedge of Brie.
  • Bake for 28-30 minutes, until the pastry is lightly browned.
  • Allow to cool in the muffin tin for 5 minutes, then remove onto a cooling rack (if not being served immediately), or onto a plate.
  • Garnish with fresh rosemary.

Bison Cranberry & Brie Tartlets

Ingredients

226g (8oz) Lean Ground Noble Premium Bison
1/2 tsp (2.5 mL) cinnamon
1/4 tsp (1.25 mL) cloves
1/2 tsp (2.5 mL) orange zest
1 tsp (5 mL) rosemary
1 tsp (5mL) onion powder
2-3 cloves garlic, finely minced
1 egg
Salt and pepper to taste

450g pre-rolled puff pastry sheets
170g Brie, cut into 24 cubes
1 cup (250 mL) cranberry sauce
Fresh rosemary, for garnish
