Bison Chilaquiles

Chilaquiles are a Mexican classic tastes even better with ground bison! Made with tortillas, homemade salsa, eggs, and avocados, this easy meal is perfect for breakfast, lunch or dinner. We like to drizzle our Bison Chilaquiles with crema - sour cream thinned with a little lime juice. Enjoy!

Directions

  • Make the salsa roja, add the ingredients to a blender, and blend for 1-2 minutes until completely smooth. Set aside.
  • Heat a cast iron skillet over medium high heat. Add the avocado oil, bison, spices, and cook until nicely browned, about 10 minutes. Season to taste with salt and pepper.
  • Remove from the pan, and drizzle in a bit more avocado oil. Add the tortilla pieces, and cook, stirring occasionally for another 10 minutes, until they get a little crispy, and lightly browned.
  • Add the bison back to the pan, and pour over the salsa roja. Stir to evenly coat. Reduce the heat and cook for another 10 minutes, stirring occasionally until the salsa reduces.
  • Remove from heat, and garnish with fresh avocado, fried eggs, cilantro, sliced green onion, jalapeño, chopped tomatoes and feta cheese. Serve immediately.

Ingredients

454g (1 lb) Extra Lean or Lean Ground Noble Premium Bison
2 tbsp (30 mL) avocado oil
1 tsp (5 mL) EACH chipotle chili powder, garlic powder, onion power and cumin
Salt and pepper to taste
8 tortillas, cut into small triangles
4 eggs, fried sunny side up
For garnish: avocado, jalapeño, diced tomatoes, sliced green onions, cilantro, feta cheese

For the Salsa Roja:

1 cup (250 mL) vegetable stock
2-3 tomatoes, chopped
2 cloves garlic
1 small onion, chopped
1 jalapeño, chopped
1 tbsp (15 mL) avocado oil
Salt to taste
