Bison Burgers:

    • Start by heating grill with heavy skillet placed on grill racks.
    • Add ground bison and seasonings to large bowl.
    • Mix gently with your hands or with a wooden spoon. Do not over-mix.
    • Shape into loose patties, just enough so that meat sticks together. Push a small well into the centre of each patty.
    • Add 1 tablespoon of olive oil, plus 1-2 teaspoon of butter to skillet and allow to melt and combine.
    • Add bison burger patties, cooking for 5-7 minutes on each side.
    • If desired, add cheese for final 1-2 minutes of cooking, allowing to melt.

Apricot Bourbon Onions:

    • Start by heating butter in a small skillet on the stove.
    • Add onions and a pinch of salt. Allow to cook until translucent, about 10 minutes, stirring occasionally.
    • Add apricot jam, stirring until jam starts to melt and bubble.
    • Pour in bourbon, remove from heat.
    • Carefully light mixture on fire using a long stemmed lighter. Encourage flames by shuffling the pan 2-3 times before allowing flames to burn out.
    • Return to the heat and allow liquid to reduce by about half.

Ingredients

Bison Burgers:

  • 2 pounds Noble Premium Ground Bison
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon granulated garlic
  • 1 teaspoon honey

Apricot Bourbon Onions:

  • 1 large or 2 small yellow onions
  • 2 tablespoon butter
  • pinch salt
  • ½ cup apricot jam
  • ⅓ cup bourbon

Toppings:

  • 4 hamburger buns, sliced
  • 1-2 tablespoon butter
  • 4 slices medium cheddar cheese
  • 8 slices of bacon
  • ⅓ cup mayonnaise
  • 1 cup shredded lettuce
