Your favourite hearty comfort food just got more heart-y! Bison meat is leaner than beef and loaded with iron, zinc, potassium and heme iron! Use a dark ale like Guinness in this recipe and you've added even more iron!

Directions

  • Heat oil in a Dutch oven over medium high heat. Add bison, and cook until nicely browned. Add butter, carrots, celery, onion, mushrooms and spices. Cook for 5-7 minutes before adding garlic and continue cooking for another minute.
  • Add ale, Worcestershire sauce, tomato paste, beef broth, and bay leaves. Cover and simmer on low for 50-60 minutes, until meat is tender, and liquid has reduced.
  • Mix cornstarch with cold water, and stir into bison mixture. Cook over medium high heat until thickened, about 5-10 minutes. Transfer mixture to a pie plate, and top with puffy pastry.
  • Make a few slits in the top to allow steam to escape while on the grill. Brush with egg wash. Preheat grill to 375-400˚F. Grill pie over indirect heat for 35 minutes until the puff pastry is nicely browned.
