Award-winning Bison Back Ribs

Directions
- Combine all glazing sauce ingredients into a small saucepan; cover and simmer for 10 minutes.
- Combine all ingredients for the spice rub; massage spice blend onto both sides of the bison rib racks.
- Wrap each rack in parchment paper until sealed, then wrap parchment package into tinfoil to completely seal the juices as the ribs cook.
- Place tin foil packages onto baking sheets and cook at 120°C/250°F for 3 ½ to 4 hours.
- Remove racks from the packages and cut the racks into single bones.
- Brush the bones with glaze and finish on the BBQ for 10 minutes to caramelize.
Ingredients
4 lbs Noble Premium Bison Back Ribs
Glazing Sauce
2 cups (400 g) chopped onions
1 tsp (5 ml) minced garlic
1 c (250 ml) ketchup
1 c (200 g) brown sugar, firmly packed
1 tsp (5 ml) salt
1 tsp (5 ml) coarse ground pepper
2 Tbsp (30 ml) balsamic vinegar
1 Tbsp (15 ml) Worcestershire sauce
1 Tbsp (15 ml) grainy mustard
Note: Glaze can be made in larger batches ahead of time and refrigerated in a sealed container fridge for 2 days.
Spice Rub
2 Tbsp (30 ml) red chili powder
2 Tbsp (30 ml) dried cumin
2 Tbsp (30 ml) dried oregano
2 Tbsp (30 ml) lemon pepper
2 Tbsp (30 ml) sea salt
Note: Spice rub can be made in larger batches and kept in a sealed jar at room temperature for up to 6 months. Use dried spices only.
